This recipe is really tasty. So tasty in fact that you’ll find it hard to believe that it is syn free on slimming world. It is super easy to make and tastes just as though it has come out of a packet. And with only a handful of ingredients, it’s just as easy.
1 packet of chicken thighs
330ml Coke Zero or Diet Coke
240 ml chicken stock
4 tbsp tomato purée
2 tbsp cornflour
2 tbsp balsamic vinegar
(I like to serve with sweet potato wedges and corn on the cob)
1. Heat some fry-light in a large deep sized frying pan/ pot and add the chicken thighs. Brown on each side.
2. Add the coke, mix in the corn flour so there are no lumps, and then add the stock, purée and balsamic vinegar.
3. Bring to the boil and leave to simmer for around 20 mins, or until the sauce has thickened. If the consistency is still a little thin, add a bit more cornflour to thicken it up.
4. Serve with rice or sweet potato wedges and veg.
