Recipe: Wholemeal banana bread

I love sweet things, particularly banana bread, but have been trying to cut down my calories recently. Disappointed with what the shops could offer I set about making my own ‘healthier’ alternative to traditional banana bread. This one is around 125 calories a slice (I cut my bread into 16ths- width slices x 8 and the down the middle). It sounds like they are really small slices, but they are so dense you don’t need any more.

  • 100 g low fat margarine
  • 2 very ripe bananas (mashed)
  • 2 medium eggs
  • 100 g golden caster sugar (or sweetener if you are being really good)
  • 100 g honey
  • 300 g wholemeal self raising flour (this isn’t less calorific, but a healthier alternative to the white version)

  1. Preheat your oven to 170 degrees C, then line and grease (I used fry-light) a bread tin.
  2. Cream the margarine and sugar together in a bowl until light and fluffy, then add the eggs, honey and bananas.
  3. When combined, slowly fold in the wholemeal flour until you have a smooth mixture.
  4. Add the mixture to the prepared cake tin and bake in the centre of the oven for 45 minutes or until the cake is cooked all the way through. Use a knife or skewer to test the middle by poking it into the centre of the cake. It should come out without any mixture on.
