Recipe: Princess cupcakes

Every girl has an inner Disney princess, right?! Well, I channeled mine last week and created these pink AND sparkly cup cakes. Very easy to make, very pretty, very tasty. Ticks all round!


  • 100g butter
  • 100g caster sugar
  • 100g self-raising flour
  • 2 medium eggs
  • a splash of milk
  • 3 tablespoons of strawberry or raspberry jam

For the buttercream frosting

  • 300g icing sugar
  • 150g butter
  • a splash of milk


  1. Pre heat the oven to 180 degrees C
  2. Cream together the butter and sugar until smooth, then add the eggs and flour and fold until combined. Add a small splash of milk
  3. Prepare your muffin tin and add equal measures of the mixture to each. Bake in the oven for around 20 minutes, but this depends on the size of cakes you make, so keep checking until the cakes go golden brown and bounce back
  4. Let the cakes fully cool and then using a corer (I picked up a really good one from Home Bargains) carefully remove a little from the centre of each cake and add a little jam before replacing the lid
  5. Mix together the icing sugar and butter gradually adding the butter and a tiny splash of milk to ensure your mixture doesn’t become too runny
  6. Pipe on to the top of the cup cakes and sprinkle with edible glitterimage1 (15)
