Recipe: Parma Ham and Caramelised Red Onion Tart

A really easy summery canapé or picnic snack, the parma ham works perfectly with the caramelised onion in this recipe. You could make your own puff pastry, but I find that shop bought is just as tasty and 100x easier!


  • 1 red onion
  • 100g parma ham
  • Handful of figs (quatered)
  • Drizzle of balsamic vinegar
  • 50g brown sugar
  • Feta cheese


  1. Roll out your puff pastry and use a cookie cutter to cut out circles. Lightly grease a muffin tin and place the pastry in each hole. Cook in the oven until golden brown (about 10-15 minutes at 180 degrees c)
  2. Next finely chop the red onion and brown it off. Then add the brown sugar and a dash of balsamic vinegar
  3. Place the parma ham in the base, share the onions between the tarts and add the figs and feta
