Recipe: Strawberry and Clotted Cream Cupcakes

I may be a little ahead of the British weather here, but these have got me feeling all summery. It might be chucking it down outside, but these cup cakes taste of the Great British Summer!


Makes 9

  • 100g butter
  • 100g caster sugar
  • 100g self raising flour
  • 2 eggs
  • Dash of milk 

For the frosting

  • 300g clotted cream 
  • Handful of chopped strawberries
  • 250g icing sugar
  • Dash of milk


  1. Preheat the oven to 180 degrees c and prepare the cake cases
  2. Put all the cake ingredients in a bowl and mix together until it is all incorporated. Continue to whisk it all together for a couple of minutes to add air
  3. Split the mixture into the prepared cake cases
  4. Cook in the oven for 20 mins or until golden and cooked through
  5. Whilst the mixture is cooling whip up the clotted cream with the icing sugar and then add the chopped strawberries and a dash of milk
  6. Core the cupcakes with a cupcake corer (I picked one up for 79p from Home Bargains) and add a little jam before replacing the lid
  7. Finish the cupcakes off with a generous helping of the clotted cream frosting and add half a strawberry to each cake
