I’ve had a real thing for chocolate and orange as a flavour pairing recently. This cake isn’t too overpowering in flavour, but offers a subtle and pleasant tang on your tastebuds.
Ingredients:
- 250g butter
- 300g caster sugar
- 3 eggs
- 100g melted chocolate
- 350g self raising flour
- 100ml red wine
For the icing and filling:
- 250g butter
- 250g icing sugar
- 50g cocoa powder
- 50g melted orange flavoured chocolate
- splash of milk
Method:
- Preheat your oven to 200 degrees c and grease and line three sandwich tins. Then cream together the butter and caster sugar.
- Melt 100g of chocolate on the hob and add the wine (being careful not to burn it) then add to the mixture.
- Add three eggs gradually, whisking in between each addition.
- Next fold in the flour to the mixture adding a little extra if the consistency looks too runny.
- Evenly distribute the mixture amongst the tins and cook in the oven at 200 degrees c for 30-35 mins.
- While the cakes are cooking, mix together all the ingredients for the icing in a stand mixer. Allow to firm up and cool in the fridge.
- Allow the cakes to cool in the tins before removing them and allowing the entire cake to cool entirely before assembling with the frosting.I then decorated my cake with the rest of the chocolate on the top.
