A perfect winter warmer and quick after work crowd pleaser.
- Dried pasta (around 1 mug full per person)
- 2 tbsp pesto
- 200g cooked and peeled prawns
- A handful of cherry tomatoes (chopped)
- Bring the pasta to the boil and allow to simmer for about 8 minutes
- Drain the pasta and mix in the prawns and cherry tomatoes. Then coat in pesto before transferring to an oven proof dish
- Cover the pasta in mozzarella and bake in the oven at 200•c for 25-30 mins
