Recipe: Pesto prawn pasta bake 

A perfect winter warmer and quick after work crowd pleaser.  

 Ingredients:

Serves 4

  • Dried pasta (around 1 mug full per person)
  • 2 tbsp pesto 
  • 200g cooked and peeled prawns
  • A handful of cherry tomatoes (chopped)

Method:

  1. Bring the pasta to the boil and allow to simmer for about 8 minutes
  2. Drain the pasta and mix in the prawns and cherry tomatoes. Then coat in pesto before transferring to an oven proof dish
  3. Cover the pasta in mozzarella and bake in the oven at 200•c for 25-30 mins
